Meal Idea Extravaganza
Sometimes I just get bored. I love creating things in the kitchen and pushing through new workouts, but sometimes I don’t have the time or mental energy to create. I do the same thing over and over and I get bored in the gym or the kitchen. Then what?
That’s where my bloggers come in!
Saving the day one at a time with fantastic recipe and workout ideas. Hopefully you can find a few here! Enjoy this collage of things I threw together in 10 minutes or less:
After doing some food prep for the week of course…
Sweet potatoes + butternut squash, quinoa, roasted carrots + potatoes + parnsips, trail mix, and lentils.
I had everything I needed to fuel my body.
Kale, broccoli, and roasted potatoes topped with a veggie burger, avocado, and a mixture of nutritional yeast, hummus, and water.
Curried mock tuna with Ezekiel toast and a side salad.
Ezekiel toast topped with a combination of peanut flour, almond milk, and chia seeds, and a sprinkle of raisins – can you tell I love me some Ezekiel bread! 80 calories, 5 grams protein, all whole ingredients :)
Sweet potatoes topped with cinnamon, peanut butter, cocoa powder, and stevia – KILLER. Try this with squash too!
Trader Joes’ Superfood Rice (frozen), Trader Joes’ falafel (frozen), roasted squash, black beans, hummus, and nutritional yeast + water for the sauce!
Sliced apple covered in a delicious sauce of peanut flour, almond milk, cinnamon, stevia, cacao nibs, and a handful of cereal.
TACO BOWL! One of my favorites: heat up Trader Joes’ Frozen Brown Rice, top with black beans, grape tomatoes, roasted sweet potatoes, bell pepper, cilantro, salsa, and guacamole. Throw in a sprinkle of taco seasoning and you’re good to go.
Brussel sprouts and broccoli – microwave in bowl with a drizzle of water for 1:30. Meanwhile, mix hummus, nutritional yeast, curry powder, and water to desired consistency. Drizzle and enjoy!
I was a lucky lady last night, and got taken out to drinks at a little new-to-me place in Boston, La Verdad Taqueria.
If you’re looking for good Mexican in Boston, this is the closest you’ll find (in my experience thus far). The margaritas are super fresh, made with fresh lime juice and agave nectar. We also got some chips and guacamole to go, and the guacamole was the best I’ve had since the last time I was in Mexico.
We decided to eat at home to save some dough, but we got the guacamole to go so we could make more awesome taco bowls at home.
Ok, yes – we’ve established I’m obsessed with taco bowls.
But these were exceptionally good.
Red leaf lettuce, cherry tomatoes, bell pepper, black beans, pinto beans, salsa, guacamole, and taco seasoning – simple and splendid.
The point is…
You don’t have to be a gourmet cook to find great vegan dishes that are centered around whole foods. Just take whatever veggies you have and throw them into a bowl with some kind of sauce and call it dinner! You may be surprised what you come to love.
