Hope all y’all had a FABULOUS weekend! I know I did.
And thanks to Katie at Healthy Diva Life for reminding us that Mondays can be marvelous rather than mucky :)
Saturday was spent doing tons of food prep so that, when the hubby came home Saturday afternoon after being away for a week, we could spend plenty of time together just relaxing and hanging out on Saturday night and Sunday.
I prepped my usual HUGE tupperware full of sweet potatoes, brussel sprouts, broccoli, cauliflower, carrots, and an acorn squash – all roasted at 400 degrees for 30-50 minutes.
I’ll use all of these awesome roasted veggies to make “salads” all week!
I also whipped up a special concoction for the hubby – peanut butter banana chocolate chip cookies – NO REFINED SUGAR, GLUTEN FREE, DAIRY FREE, EGG FREE!
They turned out delicious! Thanks to Engine 2 Diet for the recipe!
I also managed to find some time to whip up a super easy lunch of Happy Herbivore Mock Tuna (with curry powder added as my personal twist) in some lettuce wraps with a side of fresh veggies before heading out onto my roof deck to catch some rays.
BUT the real MIMM didn’t start until the hubby got home.
We enjoyed an amazing dinner of vegan tacos on corn tortillas on our roof deck while the sun was setting :)
Then came Sunday, which was packed with coffee, bike rides, farmer’s markets, hammocks, and tennis :)
We packed our own oatmeal for breakfast and headed over to Starbucks to sit outside and enjoy some coffee.
Next, we hopped on our bikes and biked over to a farmer’s market in Cambridge.
It was small, but they had all the fresh produce we could ask for!
We picked up heirloom tomatoes, baby yellow summer squash, asparagus, kale, and a baby cucumber.

After coming home, we packed up a picnic lunch and walked down to the Charles River to enjoy it. I packed a fresh raw salad.
Along with a HUGE side of fruit for the hubby and I to share – SUMMER BABY!
Then we spent the next couple hours relaxing in the hammock just reading and chatting.
After another bike ride of several miles, an hour + of tennis, and another bike ride home, I was TUCKERED OUT.
Yesterday was SUPPOSED to be my rest day, but after biking, walking, biking, tennis, and more biking, I decided my body needs another rest day today, so I’m gonna be LOW KEY. Lots of water, tea, fresh fruits and veggies, and STRETCHING.
Gotta gear up for my second session back with my trainer tomorrow!! EEEEEEK!
We are doing weight, body fat percentage, and measurements, so I’ll have that to share with you all along with my PROGRESS PICTURES!
